Ingredients:
  • 3 cups (24 oz/675g) cream cheese, full fat, at room temperature
  • 1/2 cup (4 oz/115g) sour cream, full fat, at room temperature
  • 1 cup (8 oz/225g) Lakanto sugar, Swerve, or coconut sugar
  • 3 large eggs, at room temperature, beaten
  • 2 teaspoons vanilla extract

Instructions:
Preheat the oven to 350°F (180°C) and line a 9-inch springform pan with a parchment paper circle, cut to fit the bottom of the pan. Also, boil a pot of water and set it aside.

In a large bowl, using a whisk or an electric mixer, beat the cream cheese and sour cream together until the mixture becomes light and fluffy.

Pour in the Lakanto sugar (or your preferred sweetener) and mix until the sugar has completely dissolved, which should take about 3-5 minutes.

Next, add in the beaten eggs and vanilla extract, and mix until everything is well combined.

To prevent water from seeping into the cheesecake, wrap the bottom of the prepared springform pan with 2-3 layers of foil, ensuring it's sealed tightly.

Place the foil-wrapped springform pan into a large baking pan. Transfer the cheesecake mixture into the springform pan, and use a spatula to smooth out the top.

Transfer the large pan containing the cheesecake into the preheated oven. Quickly pour the recently boiled water into the large pan, allowing the hot water to come about 2 inches up the side of the springform pan.

Bake the cheesecake for 1 hour and 20-30 minutes. When it's done, the cheesecake will have risen slightly and will be firm around the outside with a very slight jiggle in the center.

Remove the cheesecake from the oven and let it cool completely. Once cooled, cover it and refrigerate for a minimum of 4 hours, preferably overnight, to allow it to set.

After the cheesecake has set, carefully remove it from the springform pan, slice, and enjoy. You can serve it with fresh berries and raspberry sauce if desired.

Store any leftover cheesecake in the fridge for up to 4 days, or it can be wrapped tightly and frozen for up to 4 weeks.
