Sausage and Pepper Breakfast Skillet

Ingredients:

  • 2 sausage links or patties (check for low-carb options)
  • 1/2 bell pepper (various colors), sliced
  • 1/4 onion, sliced
  • 2 eggs
  • Salt and pepper to taste
  • 1/2 tablespoon olive oil or butter for cooking

          Instructions:

          1. Heat olive oil or butter in a skillet over medium-high heat.
          2. Add sausage links or patties and cook until browned and cooked through.
          3. Remove the sausage from the skillet and set it aside.
          4. In the same skillet, add sliced bell peppers and onions. Sauté until they become tender.
          5. Return the cooked sausage to the skillet and mix well with the peppers and onions.
          6. Push the sausage and pepper mixture to one side of the skillet and crack the eggs onto the other side.
          7. Cook the eggs to your desired doneness.
          8. Season the sausage, peppers, and eggs with salt and pepper.
          9. Serve hot.
