INGREDIENTS

  • 3 cups of boiled chickpeas or dried chickpeas and 
  • 2 tsp of baking soda.
  • 2 cloves of minced garlic.
  • 4 ice cubes.
  • 79 grams of tahini.
  • 1/2 tsp salt.
  • 1 cup of fresh lemon juice.
  • 1/2 cup of yogurt.
  • 1 tbsp of olive oil.
  • 2 tsp of sumac.
  • calamata olive, paprika, and parsley for garnish (optional)

INSTRUCTIONS
 

  1. If you are going to use canned chickpeas, there is no need to boil them, but rather heat them a little.
  2. If not, soak the dry chickpeas the night before.
  3. Boil the chickpeas until they are soft.
  4. Add hot water and two tablespoons of baking soda to the cooked chickpeas.
  5. Scrub the chickpeas under running water to remove the peel and let the chickpeas cool for two minutes.
  6. Place the chickpeas and garlic in a food processor and mash them until a smooth, homogeneous mixture is obtained.
  7. After blending, add ice cubes, tahini, salt, lemon juice, and yogurt to the food processor.
  8. Mix them for 4 minutes.
  9. If the mixture is thick, add hot water slowly.
  10. Pour the chickpeas into a serving bowl.
  11. Add the olive oil and chickpeas to the center of the bowl.
  12. Garnish with sumac, paprika, and parsley and serve with pita bread.
