INGREDIENTS
 

  • 1 kilo grilled eggplant
  • 1 green capsicum
  • 3 medium tomatoes
  • 1 medium onion
  • pinch of salt
  • 3 cloves of garlic
  • 1/2 cup of lemon juice
  • 2 tbsp of olive oil
  • 2 tbsp of pomegranate molasses
  • pomegranate, walnut, and pine for garnish (optional)

INSTRUCTIONS
 

  1. Roast the eggplant in the oven or on the stove, then wash and peel it.
  2. Mince the eggplant and the garlic.
  3. Finely dice peppers, tomatoes, and onions
  4. Season with salt and mix them well with the eggplant and the garlic.
  5. Put the mixture in a serving dish and garnish with olive oil, walnut, pine, and pomegranate.
  6. Serve with pita bread.
