INGREDIENTS
- 1 kilo grilled eggplant
- 1 green capsicum
- 3 medium tomatoes
- 1 medium onion
- pinch of salt
- 3 cloves of garlic
- 1/2 cup of lemon juice
- 2 tbsp of olive oil
- 2 tbsp of pomegranate molasses
- pomegranate, walnut, and pine for garnish (optional)
INSTRUCTIONS
- Roast the eggplant in the oven or on the stove, then wash and peel it.
- Mince the eggplant and the garlic.
- Finely dice peppers, tomatoes, and onions
- Season with salt and mix them well with the eggplant and the garlic.
- Put the mixture in a serving dish and garnish with olive oil, walnut, pine, and pomegranate.
- Serve with pita bread.
